”Emerald Spring Spirals.” A very delicate tea, meant to be picked early in the spring as soon as the first tender leaves appear, when their content of amino acids and tea polyphenols is at its peak. The tea must be processed on the same day it is harvested, with the entire production—plucking, drying, and rolling—completed by nightfall.
Pi Lo Chun comes in seven grades of varying quality—the lower the grade, the larger the harvested leaves, and vice versa. For the higher grades, lower drying temperatures are used, and the leaves are handled with greater care. The aroma of the dry tea is indescribable, almost honey-like. The leaves are twisted into tiny, richly hairy spirals. The infusion has a delicate emerald color, with a flavor that is full-bodied yet remarkably fresh.
