”High Mountain” – Gao Shan oolong is a classic representative of traditional high-mountain semi-oxidized teas. The dry leaves are rolled into larger balls about the size of peas, the infusion has a bright golden-yellow color. Gao Shan 高山 (“High Mountain”) refers both to a group of teas grown at high altitudes (1000 m and above) in China, especially in Taiwan, and also to a specific type of Taiwanese oolong.

High-mountain teas generally have a higher price due to the limited quantity produced. Thanks to unique climatic conditions (lower temperatures, cleaner air, dense mists), these teas are healthier (they can clearly be labeled organic), have a distinctive aroma and taste – lighter, cleaner, more intense, and the leaves are larger and firmer than those from lower-altitude gardens. They tend to undergo relatively light oxidation, and heat processing is minimal for most of them.

How to prepare?

First, rinse the leaves with hot water, then steep.
