White tea from An Ji — An Ji refers to the region in Zhejiang Province where this tea is grown and produced. Because of its name, it is often mistakenly classified as a white tea, even though it is technically a classic green tea based on its processing. The term “white” refers to the near-white color of the leaf, typical of the cultivar Bai Ye Yi Hao (Bai Ye No. 1) from the spring harvests. Once processed, the tea itself is vividly green, which returns to the originally pale green to whitish hue when brewed. An Ji Bai Cha is usually picked in early April in Tian Huang Ping, An Ji County. The leaves are long, delicate, and bright green. The infusion is a clear pale green, reflecting the classic high-mountain character of the tea.
