An Ji Bai Cha (“White Tea from Anji”) is often mistaken for a white tea due to its name. In fact, it is a green tea. The name refers to the naturally very pale, almost white color of the leaves of the Bai Ye Yi Hao cultivar (Bai Ye No. 1). The dry leaves have a vibrant green hue that lightens upon infusion. The resulting liquor is delicate, pale green to almost transparent.

This tea is harvested in early spring, typically at the beginning of April, in the Tian Huang Ping area of Anji County.

It is naturally rich in amino acids, including L-theanine, which contribute to its full, balanced flavor with pronounced umami. It is distinguished by a long, sweet, lingering finish.
